Chakka Varattiyathu Recipe

This halwa is one of my all time favourite. But we don't make this often, because we dont have jackfruit tree in our home. But my aunt has that in her house, so whenever there is a ripe fruit in that tree, she sent half of that large fruit to our home. Most of the time we eat it as it is, if the fruits are too sweet. But sometimes the fruit wont be that sweet, so it need some help and it would be transformed into this or payasam.

About Chakka Varatti Recipe

Chakkavaratty, Chakka Varattiyathu, Jackfruit Preserves, Chakka Varatti or Jackfruit Halwa is a jackfruit-based food. The fruit is peeled and cut into small pieces after the seeds have been removed. The fruit is then cooked with ghee and jaggery until it has the consistency of a paste or jam.

Chakka Varatti sweet is pretty easy to make, each people have their own way of making it. My aunt used to chop the fruit finely and cook them in jaggery syrup and make this. But i find that very time consuming, because you have to spend quite a long time separating the fruits from the rough jack fruit. So this is how i do it. It is easy and and delicious.

Ingredients for Chakka Varattiyathu Recipe (Jackfruit Preserves)

  • Jackfruit / Chakka - 6 cups
  • Jaggery - 1.5 cups grated
  • Ghee - 4 to 5 tbsp
  • Water - 1.5 cup

Jackfruit / Chakka :

When you get to the inside, it has the texture of shredded meat—ripe jackfruit has a surprisingly sweet flavour that tastes like a combination of mango, pineapple, and banana, or exactly like Juicy Fruit gum.

Jaggery :

Depending on its composition, jaggery can taste like fresh cane juice, maple syrup, caramel, or molasses. The unrefined natural sweetener is available in a variety of colours, including light amber, golden brown, and dark brown. Jaggery is known by many different names, including gur in Urdu, gud in Hindi, and vellam in Tamil.

Ghee :

Ghee tends to be one of those hyperbole-inducing foods, like macarons and gelato, that people describe quite dramatically as being heavenly or the best thing ever. In actuality, ghee tastes like a cleaner, richer, more decadent version of butter itself.

How to Make Chakka Varattiyathu Recipe (Jackfruit preserves)

  1. Take jackfruit and 1 cup of water in a pressure cooker. Cover and pressure cook for 3 whistle, simmer the flame for 10 mins. Turn off the heat.
  2. Now transfer this mix to a kadai.
  3. Take jaggery and ½ cup of water in a sauce pan, heat so the jaggery is melted. Strain this and add to the jackfruit mix.
  4. Now heat this on high heat and let the mixture gets thick.
  5. Keep cooking them and keep stirring, it will get dark in color and very thick.
  6. Add ghee at this point and keep mixing them,
  7. At a stage it will leave the sides of the kadai like a halwa.
  8. Turn off the heat and let it cool.
  9. Serve.

Ingredients

  • 6 cups Jackfruit / Chakka
  • 1.5 cups Jaggery grated
  • 4 to 5 tbsp Ghee
  • 1.5 cup Water

Instructions

  • Take jaggery and ½ cup of water in a sauce pan, heat so the jaggery is melted. Strain this and add to the jackfruit mix.

  • Now heat this on high heat and let the mixture gets thick.

  • Keep cooking them and keep stiring, it will get dark in colour and very thick.

  • Add ghee at this point and keep mixing them,

  • At a stage it will leave the sides of the kadai like a halwa.

  • Turn off the heat and let it cool.

  • Serve.

Separate the fruit from the jackfruit

Take them in a pressure cooker

Add a cup of water

cover and pressure cook

now the fruits are completely cooked

Now take some jaggery in a sauce pan

Now the excess water has evaporated

You have to keep cooking it for 15 mins or so, till it reaches this consistency..Keep stiring and mashing them

    We had a jackfruit that was not very ripe but we had to cut it as it was getting spoilt. Bit of googling got me to your site. I followed your instructions and made this halwa. It does not have the same colour as yours but it is extremely tasty. Actually, I am not sure how this is supposed to taste because we never had it before. In any case, scored lots of brownie points from wife☺. Thanks a lot for the recipe. I will come back to look for more.
